Simple Vinegar Slaw

Your new favorite slaw!


I use this recipe all of the time for a variety of get togethers. I dress it up or down depending on what else is being served. Sometimes, I add chopped celery and pimentos. Other times, I add diced tomatoes. It just depends on what I have available and the meal itself. This slaw is perfect with any typical grill out foods. So, save this for your spring, summer and fall gatherings!


Ingredients


  • 14oz bag of coleslaw mix

  • 1/4 cup sugar

  • 1 red bell pepper (chopped)

  • 1 sweet onion (chopped)

  • 3/4 cup white distilled vinegar

  • 1 tbsp salt

  • 1 tbsp pepper

  • 1/3 cup olive oil


Directions


Step 1

Mix the coleslaw, sugar and bell pepper together.


Step 2

Bring the vinegar to a boil and then pour over the coleslaw mixture. Stir until well combined, allowing the sugar to melt.


Step 3

Season with the salt and pepper and drizzle the olive oil all over while stirring. Allow the coleslaw to chill in the fridge for at least an hour. Be aware that the slaw will shrink, and the vinegar will settle at the bottom, and that's okay. Just give it a good stir before serving. It is SO good with pork or chicken.
