Brunching it up.
About the Recipe
This is such an easy and quick brunch. I usually have all of these ingredients in my fridge and pantry. So this was a simple option for me to put together for myself. Other options that I would suggest for toppings: banana peppers, tomatoes and/or onions.
Ingredients
2 eggs
1 slice of sourdough
1 tbsp pesto
1/2 oz feta cheese
1 tbsp sliced kalamata olives
Preparation
Step 1
Over medium heat, cook both eggs to your liking (I "fried" mine by using cooking spray on the pan first).
Step 2
Toast the sourdough and spread the pesto on top. Sprinkle the feta and olives all over and top with the eggs.
