Watermelon Feta Stacks

Light and refreshing!


About the Recipe

Serve this up for an appetizer this summer for your friends and family. You won't regret it!


Ingredients

  • 1 cup watermelon (cut into 3"x3" squares)

  • 1oz feta (thinly sliced)

  • 1/2 cup fresh arugula

  • 1/2 tbsp olive oil

  • 1-2 fresh basil leaves

  • salt, pepper and red pepper flakes to taste


Preparation


Step 1

Arrange the arugula at the bottom of your bowl. Layer the watermelon and feta into a stack. Drizzle with the olive oil, top with the basil, salt pepper and red pepper flakes.
