Veggie Mac and Cheese

Sneak in those veggies for the kids (and you)!

Do your kids turn their noses up at greens? Mine won't even think about eating spinach alone, but when I blend it up in a smoothie or cook it down in a dish like this, it seems less "gross" to them. I can finally get them to eat their dinner with greens by making a meal like this. It's delicious for them, and we, as the adults, don't mind the splurge as a side with a lean protein.

You could switch out the vegetables to your liking as well. I've done carrots and peas before, and they liked it just as much! When you make this dish, it is just as good reheated the next day. It's easy enough to whip up really quick to feed the kids. Whatever is leftover (depending on how much) can be the next day's lunch or dinner for the kids. Not a whole lot leftover? No problem. Pair it with some fruit and/or lean meat to complete the meal. For the adults, like I said, go with a lean meat, add a side salad, and scoop a little of the mac and cheese on your plate to enjoy. This dish pleases everybody!


Veggie Mac and Cheese


Ingredients

  • 2 cups of pasta (you choose, whole wheat, regular, bow tie, penne, etc.)

  • 1 tbsp unsalted butter

  • 1 tbsp half n half

  • 1 cup shredded cheddar cheese

  • 1 cup fresh spinach (hand tear)

  • 1/2 large tomato (diced)

Instructions

  1. Cook past according to instructions and set aside.

  2. Melt butter on low-medium heat, whisk in the half n half and cheddar cheese.

  3. Once completely melted, add the pasta to the cheese, stir and add in the spinach and tomatoes.

  4. Cover and leave on low heat until the spinach is cooked all the way down. Stir and serve!
