Vegetarian Bagel Sandwiches

Simple and filling!

My husband and I love a good everything bagel topped with cream cheese. This was a nice change up with the added vegetables and vinegar. Plus, I'm a huge fan of tomatoes and pickles. So this was right up my alley.


Ingredients

  • 2 everything bagels

  • 1 mini cucumber (sliced)

  • 1/2 onion (I used sweet) (sliced)

  • 2 tbsp white vinegar

  • 2 tbsp capers (with juice)

  • 1 tbsp olive oil

  • 2 tbsp dill

  • 1 tomato (sliced)

  • 2 radishes (sliced)

  • 4 tbsp reduced fat cream cheese


Directions


Step 1

Place the cucumber, onion vinegar, capers, olive oil, and dill in a jar and shake until well combined. Allow to chill in the fridge for about 20 minutes.


Step 2

Meanwhile, toast the bagels and spread cream cheese evenly on both bagels. Evenly distribute the tomatoes and radishes. Top with the cucumber mixture. This is messy, but it is SO good!
