You can't go wrong with a yummy frittata!
I love making a frittata for breakfast for a few days. They are even delicious enough to serve as "breakfast for dinner", and it's a tasty way to get in a serving of vegetables. Between the two of us, my husband and I eat this up in just 2 or 3 days.
This is one of the easiest meal preps that I recommend to almost all of my clients.
Frittatas are just so easy to whip up with whatever ingredients you enjoy. Sometimes I'll make one just to get rid of a few leftover vegetables from the week and a small amount of cheese (just like this dish). After you cook your frittata, just store it in your fridge and cut off a slice to heat up in the morning (either at home or for on the go). This is one of the easiest meal preps that I recommend to almost all of my clients.
Broccolini Frittata
Ingredients
6 eggs
2 tbsp half n half
1/3 cup goat cheese crumbles
1 cup broccolini (cut to your liking)
1 cup tomatoes (diced)
2 garlic cloves (minced)
salt, pepper & onion powder to taste
Directions
In a large bowl, whisk the eggs and half n half together.
Add all other ingredients to the bowl and mix until well combine.
Spray a pie dish with cooking spray and pour the mixture into the dish.
Bake at 400 degrees for 25 minutes.
