Grab, heat & go!
This is a seriously great option for breakfast on the go. You can simply reheat a slice in the microwave for 15 to 30 seconds. I made this on a Sunday and enjoyed it over the next few days. It's light enough yet filling enough that I was able to eat a slice on the way to the gym and then teach my group fitness class (or two). I highly recommend this for a quick and healthy option for on to go!
Ingredients
6 eggs
1/2 cup shredded pepper jack cheese
1/3 cup mushrooms (sliced)
1 tomato (diced)
Directions
Step 1
Scramble the eggs and stir in cheese.
Step 2
Spray the sheet pan with cooking spray. Pour the egg and cheese mixture all over the sheet pan.
Step 3
Evenly distribute the mushrooms and tomatoes all over the sheet pan and bake at 375 degrees for 10-15 minutes.
