Salmon Tacos with Avocado Cream Sauce

Leftover salmon? Get creative!

We had a leftover salmon fillet from the night before and didn't know what to do with it. I decided to give salmon tacos a try, and I'm so glad I did! You could do the same style taco with really any fish that you have leftover. I know it's difficult to find ways to eat leftover fish; so here is a simple and easy option! I kept it really basic with the toppings, but added a little extra flavor with the avocado cream sauce. I made my sauce thick, but you can easily just add extra water to make it more runny.

The best part of the avocado cream sauce is I could use the leftovers on multiple lunches the following two days. For example, we had leftover burgers from the week, and I used it as a topping opposed to your normal sauces on a burger. The next day, I added it to a salad, as if it were guacamole (super simple and very delicious).





Salmon Tacos with Avocado Cream Sauce


Ingredients


Salmon Tacos

  • 4 corn tortilla shells

  • 6oz salmon fillet (this was leftovers/precooked)

  • 1/2 cup shredded lettuce

  • 1/2 red onion (diced)

  • 1 tomato (diced)

Avocado Cream Sauce

  • 1 avocado

  • 1/2 cup light sour cream

  • juice from 2 limes

  • 1/2 cup cilantro

Directions

  1. Blend avocado, light sour cream, lime juice and cilantro. Add 1-2 tbsp (or more) water if needed to make sauce more runny.

  2. Simply heat the shells and salmon to your liking and dress your tacos!
