Salami & Egg White Bites

Easy breakfast on the go!

Sometimes you just need a quick grab and go option in the mornings! That's why I love having stuff like this on hand for me. The kids are easy enough with the make ahead muffins or leftover protein pancakes from the weekend. For me, I grab something like this, pop it in the microwave for about 20 seconds and go!


These are packed with protein too. Just one of the pepper jack bites has 9g of protein in it. So, if you grab two, you are set for breakfast, my friend; especially if you are heading to the gym (super light on your stomach but filling enough to get you through your workout). These can easily be a midday snack as well. Don't hesitate to heat one or two up to curb your appetite before dinner.


Ingredients

  • 12 slices of salami

  • 2.25 cups liquid egg whites (36 tbsp)

  • 3/4 cup shredded pepper jack cheese

  • 6 tbsp feta cheese

  • 6 cherry tomatoes (halved)

Directions

  1. Line each muffin cup with a slice of salami.

  2. Pour 3 tbsp of liquid egg whites into each cup.

  3. Evenly distribute the pepper jack cheese through 6 cups.

  4. Evenly distribute the feta cheese and tomatoes through the remaining 6 cups.

  5. Bake at 350 degrees for *10-15 minutes (until eggs are no longer runny).

*I found that the feta egg bites took a little longer to cook due to the moisture from the tomatoes. So I took out the pepper jack bites first (around 10 minutes) and continued cooking the feta ones until they looked done (around 15 minutes).
