Road Trip with Three Kids

Some helpful tips, food prep for on the road and more!

Let's start with the drive to Panama City Beach. Like our previous road trip to Orlando, I stocked the car with coloring/sticker books, reading books, and lots of snacks (oranges, grapes, cereal bars, trail mix, etc.). I premade us some breakfast for that morning to make it as easy as possible for us to get on the road (even though we couldn't leave until lunch time). I made the boys some French Toast Muffins (they were eaten immediately) and some homemade crustless sandwiches for on the road. I always use this Sandwich Cutter and Sealer to make crustless peanut butter and honey sandwiches. They freeze great and thaw out just in time for lunch.

I can't recommend this enough because it's so much cheaper than buying them premade from the store. Yes, it take a little time, but the kids love it. Plus, the leftover crusts get tossed to the chickens. It's a win-win!


French Toast Muffins

(makes 4 muffins)

  • 2 eggs

  • 1/4-1/3 cup milk

  • 1 tsp vanilla extract

  • Cinnamon to taste

  • 2-3 slices of bread

Directions


Step 1

Mix the eggs, milk, vanilla and cinnamon together. Add half of the bread (torn into bite sizes) and mix well.


Step 2

Spray a muffin pan with cooking spray and line 4 of the cups with the rest of the bread (torn into bite sizes). Pour the mixture into the 4 cups and bake at 350 degrees until done (10-15 minutes)




This trip, we added pillows and blankets to help out with naps for the younger two. My middle has no problem with falling asleep in the car, but the most common problem with any sleeping kid in the car is the head falling forward or to the side. We've tried the little straps that go across the top of the kids' heads, but there's always something that goes wrong. It either eases its way up or covers their entire faces, which wakes them up, and that's the opposite of what we want. With just a simple pillow, both my middle and my littlest figured out quickly that they can just hug the pillow and rest. I don't know if we will get that lucky again, but I will definitely give it another try!


When we arrived, it was dinner time. We let the boys hop in the pool really quickly and then headed out to eat with some of the family at The Grand Marlin, which was so good. My husband and I split some oysters and the sword fish with veggies. Every single bite was delicious. I highly recommend going to a nice night out either as a date, a girls lunch or even with the whole family. They accommodated all six of the children at our table really well.


The ocean was absolutely perfect. There were hardly any waves; the boys had a blast just being able to walk out and not be knocked over immediately. We were even able to take a pontoon out to Shell Island and let our oldest look for sea creatures while our other two boys napped onboard. We found out after we made it back to the condo that one of the sea urchin shells we brought back actually had a small crab in it! We set it free in the ocean. We had such a good time on this trip that we decided to stay an extra day; we even went out to play a round of mini golf (the boys' first time). I have video below capturing all of this.
