Ricotta & Spinach Pizza

Who doesn't love pizza night?

We went on Facebook Live the other night to make this pizza. I love getting the boys involved on a pizza night. I simply gave Everett, my three year old, to "paint" the sauce onto the pizza crust while I got everything else ready. He really enjoyed it, and so did I.


I usually buy a premade crust. I bought the Mama Mary's Thin and Crispy crusts; it comes as a two pack. This way, I can make the boys a pizza that they enjoy (plain cheese) and one for me and my husband to get a little creative. I was actually able to get Everett to eat some spinach too, which was a total win in my book. I'll take it. Spinach & Ricotta Pizza


Ingredients

  • 1 Mama Mary's Thin & Crispy crust

  • 2 tbsp harissa sauce (I used Mina's mild sauce)

  • 2 tbsp tomato paste

  • 1 tbsp olive oil

  • 4-5 cups spinach

  • 1/2 yellow onion (diced)

  • 10 tbsp part skim ricotta cheese

  • 4 tbsp capers

Directions


Step 1

Heat the olive oil in a skillet over medium heat. Once warm, cook the onions until almost translucent. Add the spinach and cook it down until completely wilted. Drain excess liquid from the spinach and set aside.


Step 2

Mix the tomato paste and the harissa until well combined. Spread the sauce on top of the pizza crust. Top with the spinach mixture and randomly spoon the ricotta all over the pizza. Sprinkle the capers all over.


Step 3

Bake at 425 degrees for 7-8 minutes!
