Pumpkin Pie Energy Bites

Skipping along right into fall over here!

We brought back our Facebook Live cooking show this week, and it was so fun to get back behind the camera with my middle, Everett.

He is completely becoming his own person now, and I'm really enjoying witnessing it. Now that my oldest is off to his new school for Kindergarten, Everett is now the "big brother" at preschool. He likes to show me how he can help take care of my youngest, and it is the sweetest to watch.

Don't get me wrong though, it's almost always like a wrestling match between all three boys, but there are definitely sweet moments that only exist in this house full of boys. Anyway, you can catch me and Everett in a sweet moment here as we make these energy bites on Facebook Live. He truly enjoys helping me in the kitchen, and I enjoy encouraging it.


Pumpkin Pie Energy Bites


Ingredients

  • 1/2 cup pumpkin puree

  • 1/2 cup peanut butter

  • 1/3 cup maple syrup

  • 1/2 cup pecans

  • 1-2 tbsp pumpkin pie spice

  • 1 tbsp flax seeds

  • 1 tbsp chia seeds

  • 2 cups oatmeal

Directions


Step 1

Blend all of the ingredients in a blender or food processer until the texture becomes cookie dough-like.


Step 2

Scoop out 15(ish) bites as evenly as you can and then ball them up with your hands.


Step 3

Chill in the freezer for 30 minutes and enjoy!


You can keep these in the freezer and take out as you please. I have bagged these in bags of two for a midday snack for me or the boys. They taste heavenly when thawed (honestly, it's like pumpkin pie cookie dough). You. Are. Welcome!
