Potato & Egg White Bake

Make this for Christmas morning breakfast!

This was so delicious. You can easily whip this up for Christmas morning, or you can save it for an easy meal prep for weekday mornings. Simply slice yourself a serving, heat and go! You can easily alter this to your liking. Turkey instead of ham, shredded cheese instead of goat cheese, regular baking potato instead of yellow potato, etc. Do whatever you like!


Ingredients

  • 1 large yellow potato (thinly sliced)

  • 1 cup liquid egg whites

  • 6 slices of ham deli meat (cut in small pieces)

  • 4oz plain goat cheese (cut in chunks)

  • Salt and pepper

Directions


Step 1

Slice the potato and lay all of the slices at the bottom of a prepared pie dish.


Step 2

Pour the liquid egg whites in the dish and evenly distribute the ham pieces and goat cheese. Sprinkle salt and pepper all over.


Step 3

Bake at 350 degrees for roughly 40 minutes (until the center is set)
