A quick and easy side dish for everyone!
I paired this with some grilled chicken, and it reminded me of the broccoli casserole dish my mom makes for Thanksgiving. The only difference is this is orzo and not rice, and it is way less cheesy. Of course, the Thanksgiving casserole is tastier, but this is a good alternative as a side dish on a week night. My kids and husband enjoyed it during dinner. I could see it being a good side for any meat, honestly. I hope you give it a try!
Ingredients
8 oz orzo
1.5-2 cups broccoli (roughly chopped)
2 tbsp half & half
4 tbsp grated Parmesan cheese
1-2 tbsp lemon juice
Directions
Step 1
Cook orzo according to instructions. Drain the orzo and set aside.
Step 2
Over medium heat, cook the broccoli in a small pot of water (enough water to just over the broccoli) until al dente (still a little bit of crunch).
Step 3
Drain the broccoli, add the half & half, cheese, lemon juice and orzo to the pot. Stir until well combined and serve!
