One Skillet Beef & Butternut Squash

Such an easy clean up after this meal!

This is a meatier version of the Butternut Squash Casserole. I also switched the greens on it. This is more of a full meal whereas the casserole is more of a side dish. This was great on a cold night. I hope you enjoy it!


Ingredients

  • 1lb ground beef (I used 93% lean)

  • 1 butternut squash (about 5 cups cut in small chunks)

  • 1 yellow onion (chopped)

  • 3 cups turnip greens (chopped)

  • 1 tsp ground cinnamon

  • 1 tsp chili powder

  • salt & pepper to taste

Directions

  1. Brown the ground beef in the skillet.

  2. Remove the ground beef and leave most of the grease (there shouldn't be much).

  3. Cook the butternut squash with the broth until mostly tender.

  4. Add the onion and cook until slightly tender.

  5. Add the turnip greens and cook them down completely.

  6. Add the ground beef back to the skillet, season and stir.
