A one skillet dinner
This is basically a mild chili with less liquid. You can serves this on top of rice, with tortilla chips or eat it as is. I had sour cream and avocado on top because I had my in laws in town and needed this to go a long way. You can easily spice this up as you like by adding jalapenos.
Ingredients
1 lb ground beef
1 zucchini (sliced)
1 yellow onion (diced)
1 bell pepper (chopped)
1 can chili beans (drained)
salt, pepper and chili powder to taste
1 cup water
1/2 cup shredded cheese
cilantro for topping
Directions
Step 1
Brown the beef in a skillet over medium heat along with the zucchini, onion and bell pepper.
Step 2
After browning the beef, add the seasoning, water and chili beans. Stir and cook on low until the vegetables are completely cooked through. Add the cheese and stir until well combined. Allow the cheese to completely melt and remove from heat.
Step 3
Top with cilantro. Optional: add avocado and sour cream on top in order to stretch this recipe out a little further for an additional serving along with tortilla chips.
