Mediterranean Pasta

All the flavors in this dish!


This pasta dish has all of the flavors you could want in it. It takes no time to put together, and it isn't lacking in creativity. You could easily add a meat to this as well. Feel free to mix it up when you make this at home!


Ingredients


  • 8oz linguine pasta

  • 2 tbsp olive oil

  • 2-3 garlic cloves (chopped)

  • 1 red onion (chopped)

  • 2 cups spinach (chopped)

  • 1 cup cherry tomatoes (halved)

  • 1 can of artichoke hearts (drained and sliced)

  • 1/2 cup dry white wine (like pinot grigio)

  • 1/2 cup kalamata olives (sliced)

  • 1/3 cup parmesan (shredded)


Directions


Step 1

Cook the linguine according to instructions. Reserve 3/4 - 1 cup of water from cooked pasta. Drain pasta and set aside.


Step 2

Add the olive oil to the same pot over medium heat. Add the garlic and onion and cook for 2-3 minutes.


Step 3

Add the reserved water to the pot and bring to a low simmer. Add the spinach, tomatoes, artichokes, wine and olives. Stir in the pasta and combine all of the ingredients. Top with the parmesan and serve!
