Perfect for on the go!
I made three of these on a week that I knew my husband would be out of town, and I had two nights of soccer practice with the boys back to back. I froze all three. The next night, I unwrapped one, rolled it in a paper towel and reheated for 1 minute in the microwave (this may vary for each microwave). I did the same the following night. The third day, I simply took the wrap to work with me and allowed it to thaw at room temperature for a couple of hours (from 8:30am to 11am). I could have heated it up to make the cheese melt, but I didn't mind having a cold wrap. I hope this helps you on some busy weeks when you need good food but have no time!
Ingredients
1 sundried tomato wrap (10 inch)
3/4 cup shredded chicken
1/4 shredded cheese (reduced fat)
cilantro to taste
Directions
Assemble your wrap or as many as you would like to freeze for later.
Wrap in tin foil if you are making for the next day or freezing. If freezing, put in a Ziploc bag and label the date.
