There's nothing wrong with Taco Tuesday.
I decided to simplify our meal plan for the summer by creating a theme for every night's dinner. Who says Taco Tuesday is a bad idea? By creating a theme that is easily customizable yet has an easy "go to" option, I can make meal planning less strenuous every week.
By sticking to these themes every week, it will make meal planning a little easier with all the chaos of having all three boys (and the puppy)...

Freestyle Friday
Saturdays and Sundays are for grilling, out to eat, or whatever my family and I want to do. So, I never plan for them until the day before or the day of most of the time.
Obviously, meatless means no meat for Monday's dinner. My "go to" for this is a burrito bowl; however, we had a lot of meat leftover from this past weekend and ended up using some on top of our burrito bowl. No harm done!
Taco Tuesday is also pretty self-explanatory, but I would like to point out that it doesn't have to be your standard beef tacos and flour tortilla shells. It can be shrimp tacos with red cabbage on corn tortillas, or it can even be a taco salad bar. We plan to get creative on Tuesdays!
Whole Wheat Wednesday is a little basic, but I really think we'll enjoy getting creative with this too. My initial thought was just sandwiches, but I thought maybe we could make it a pasta night every now and then. Both options are easy enough to customize to whatever we are lacking in the week (lacking greens? Put spinach on the sandwiches or throw some steamed broccoli in the pasta)!
Thankful Thursday is going to be dedicated to our southern family-style dinner. I plan to make a whole chicken with black eyed peas, sweet potato mash and roasted broccoli this week. It's southern food with a healthy twist y'all.
Freestyle Friday is the one night every week that I want to try something new! For example, this week I plan to make an Asian Cashew Chicken Stir Fry. Even if I make something I normally make, I'd like to add something else to it to make it different. It's just a little challenge for myself.

I used some leftover Hungryroot MARIA AND RICARDO'S Organic White Flour Tortillas for the shells, and I had this leftover Hungryroot Rainbow Veggie Mix as a side. I simply cooked the veggies down and drizzled some lime on top.

Leftover Chicken Tacos
Ingredients
4-5 grilled chicken tenders
4 tortilla shells
4 tbsp lite mayo
Juice from 4 limes
1 tbsp chili powder
Cilantro to taste
1 package of rainbow veggie mix
Directions
We had leftover grilled chicken, but if you need to cook yours, you could easily whip them up in the air fryer.
Mix up the sauce ingredients: mayo, lime and chili powder
Heat up the shells and assemble your tacos (topping with cilantro)
