Italian Stuffed Shells

The BEST dinner for the whole family!



About the Recipe

This was the absolute best! The five of us ate every bit of this dish (whether it was dinner or leftovers). Make this for a group, and I promise everyone will love it!


Ingredients


  • 1lb mild Italian ground sausage

  • Fresh basil to taste

  • Salt & pepper to taste

  • 1lb jumbo pasta shells

  • 10oz fresh spinach

  • 16oz low fat cottage cheese

  • 8oz low fat ricotta cheese

  • 1 jar of marinara sauce

  • 1/3 cup shredded mozzarella cheese


Preparation


Step 1

Brown the Italian sausage. Drain fat and set aside. Cook the pasta according to box instructions. Drain water and allow the pasta to cool before handling.


Step 2

In a large skillet, sauté the spinach with a little water. Once it is completely cooked, drain any leftover liquid and mix with the cottage cheese, ricotta cheese and sausage.


Step 3

Fill each shell with the with sausage mixture and place in a large baking dish (open side up). Cover with the marinara sauce and top with the mozzarella cheese. Bake at 350 degrees for 10-15 minutes (until the cheese has melted). I had leftover shells and made some homemade jumbo mac and cheese for the boys!
