Homemade Pimento Cheese

Football season is coming!

Football season is just around the corner! This would be a great crowd pleaser for a group at a tailgate or a football party. You can make this even lighter by using reduced fat cheese and serving with celery sticks. You can always make pimento cheese with pre-shredded cheese and canned pimentos, but I really enjoyed the taste of freshness by doing it this way. My next step is to make my own homemade mayonnaise. So it will all be as fresh as I can make it (I don't plan on making my own cheese anything soon).


Ingredients

  • 1 red bell pepper (seeded & cut in large chunks)

  • 2lb block of cheddar cheese (hand shredded)

  • 1/2 cup lite mayo

  • 1-2 tbsp Dijon mustard

  • 1 tbsp paprika

  • salt to taste

  • 1 tbsp cayenne pepper


Preparation

Step 1

In a large skillet, over medium-high heat, char both sides of each piece of bell pepper. Add enough water to make the bell pepper float and bring to a boil. Cook until the pieces become tender. Remove the pepper from the pan and allow to cool.


Step 2

Shred the cheddar and add to a large bowl. Add the mayo, Dijon, paprika, salt and cayenne to the bowl.


Step 3

Chop all of the bell pepper pieces and add to the bowl. Stir all ingredients until all is well combined. Chill in the fridge. Serve cold with celery!


*You can make this even lighter in calories by using reduced fat cheese.
