Hash Brown Casserole

Feed the whole family for dinner AND breakfast!

I could eat this every week. Seriously, it's that good. Make this for the family for dinner and save the leftovers for breakfast, or make it for a brunch on the weekend. Your pick. Either way, it's fantastic and will please everyone at the table!


Ingredients

  • 16oz breakfast sausage

  • 1 white onion (thin slices)

  • 3-4 cups spinach

  • 16oz frozen bag hash browns

  • 6 eggs

  • 2 tbsp cream

  • 1/4 cup milk of choice (I had whole milk)

  • 1 cup shredded cheese (I used swiss & gruyere)

  • salt and pepper to taste

Directions

  1. Brown the sausage and scoop onto a plate lined with paper towels.

  2. Remove most (but not all) of the grease.

  3. Cook the onions in the pan with the grease for about 2 minutes, add the spinach and the hash browns.

  4. Cook until the hash browns are completely cooked through.

  5. Add the sausage back to the pan and remove the pan from heat.

  6. Whisk the eggs, cream, milk and cheese. Season with salt and pepper.

  7. Mix the hash browns with the egg until well combined and then pour the entire mixture into a small lasagna dish.

  8. Bake at 375 degrees for 40-45 minutes.
