Grilled Chicken Big Dinner Salad

Who says a salad can't be filling?

I love doing a big salad for dinner occasionally. When I do, I have to make sure that it's enough for my husband. I usually load my big dinner salads up with a cheese, pickled vegetables, fresh vegetables, nuts/seeds/beans, a meat and/or an egg. Salads may be considered the "light" choice, but these big dinner salads can most definitely add up in calories. So, don't be surprised to be super full after eating this.


Ingredients

  • 1 head of romaine lettuce (chopped)

  • 1 tomato (diced)

  • 1 cucumber (peeled and chopped)

  • 2 boiled eggs (chopped)

  • 1/2 cup chickpeas

  • 1/4 cup pickled banana peppers

  • 2 chicken breasts (grilled and chopped)

  • 1/2 sweet onion (chopped)

  • 3oz feta cheese

Directions


Step 1

Assemble your salad however you choose!
