You can make also turn these into deviled eggs!
If you have boiled free range eggs, you know that they an be difficult to peel. This is because the free range hens' egg membranes within the shell are tougher due to their diet. With that being said, it can be really discouraging to take the time to boil a dozen eggs just for them to look a hot mess after peeling. When this happens to me, I turn the boiled eggs into egg salad. Sometimes I can manage peeling the free range eggs neat enough and then I fill them however I choose. This egg salad can easily be turned into the filling for deviled eggs as well. I tried it both ways and enjoyed them thoroughly. I hope you give one (or both) a try!
Bacon Tomato Egg Salad
Ingredients
10 boiled eggs (peeled and chopped)
4 tbsp lite mayo
2 tbsp Dijon mustard
1 slice of bacon (chopped)
1-2 slice(s) tomato (chopped)
salt & pepper to taste
Preparation
Step 1
Mix all ingredients together until well combined. Chill in fridge until ready to serve.
Serve suggestion: make mini egg salad sandwiches ahead of time and bring to the tailgate!
