Fiesta Sweet Potatoes

An unexpectedly filling dinner that is simple!

Sweet potatoes are delicious on their own, but they get even better when you throw a little spice at them! I loved making these; they were so good and so filling. I definitely wasn't looking for an evening snack after this.

My husband even gave a thumbs up on these!

I made the entire pack of ground chicken in preparation for the next night's dinner, and you can do the same. We had these one night, and we have chicken tacos with the leftovers. All I had to do the next night was reheat the meat and heat up the shells. Both nights were so simple and satisfying. My husband even gave a thumbs up on these!



Fiesta Sweet Potatoes


Ingredients

  • 1 lb ground chicken

  • 1/2 red bell pepper

  • 1/2 green bell pepper

  • Season to taste with cumin, chili powder, and garlic powder

  • 1 tbsp avocado oil

  • 2 sweet potatoes

  • 4 tbsp guacamole

  • 4 tbsp salsa

Directions

  1. Mix the meat, peppers, and seasoning in a large bowl.

  2. Heat oil on skillet at a medium heat and brown the meat.

  3. Meanwhile, microwave the potatoes for 6-7 minutes each.

  4. Top each potato with 1/4 of the meat, 2 tbsp guacamole and 2 tbsp salsa. Save the other half of the meat for either tacos or a burrito bowl the next night!
