These are perfect for on the go or a quick snack to fix your sweet tooth craving. I love coconut, but I know not everyone is as big of a fan as I am. If you don't like coconut, sorry, this recipe isn't for you.

The texture of these bites are a little different from the previous energy bite recipes of mine because there aren't any oats or peanut butter. If you aren't a coconut fan, you should check out my Basic Energy Bites, Peanut Butter Banana Bites, or Peanut Butter Maple Bites. All are perfect for breakfast on the go, a quick snack or a simple dessert. Honestly, you could make any of these and serve as an appetizer at a party (save this for football season).
Quick Nutrition Talk: coconuts are known for being a "healthy fat", medium chain fatty acid.
Coconut Energy Bites
Ingredients
10 dates (soaked in water for 15 minutes)
1.5 cups coconut flakes (unsweetened)
1/4 cup cocoa powder
1 tsp vanilla extract
1/2 tsp sea salt
Instructions
Strain the dates and place in blender along with all other ingredients.
Blend until a dough forms.
Chill in the fridge for 30 minutes.
Then, evenly distribute the dough into 12 round bites.
Store in airtight container in the fridge for the week!
