Cauliflower Mash

A fun and tasty alternative!

I have messed this recipe up a handful of times. I either under seasoned, or I over blended the mix. If you happen to over blend, just turn it into a side of cauliflower soup. If you don't like that idea, freeze it as a soup for later use. The key is to add the right amount of liquid, pulse and check. I advise just pulsing once, checking the consistency and repeating until it is the right thickness. I love having this on the side with pretty much any meat. It's a great alternative to mashed potatoes. You can't beat only 3g Net Carbs!


Ingredients

  • 1 head of cauliflower (cut in florets)

  • 1/3 cup water

  • 1/2 tbsp onion powder

  • 1/2 tbsp garlic powder

  • 1/4 cup cream

  • 1 tbsp butter

  • black pepper to taste


Directions


Step 1

Boil the cauliflower in water until just tender.


Step 2

Add the cauliflower to a blender with 1/3 cup of water from the pot the cauliflower was boiled in. Add the cream, butter, and seasoning to the blender.


Step 3

Pulse 4-5 times until the mash is to the consistency you like. Check it after each pulse. I have accidentally turned my mash into cauliflower soup because I blended for too long. If you do it too long, don't worry. Just have a side of cauliflower soup!
