A yummy vegetarian dish!
I tend to lean more towards vegetarian when I cook for myself. I actually used to be vegetarian for a while. So those tendencies come out every now and then. It's just what I like. I added the walnuts to this dish to add some extra crunch and flavor, and it certainly did just that. I hope you enjoy!
Ingredients
1 tbsp olive oil
1 white onion (sliced)
2 cups broccoli florets
1 red bell pepper (roughly chopped)
3 cups coleslaw
8 walnut halves (roughly chopped)
4 tbsp Asian sesame dressing
3 eggs
2 cups cooked rice (like minute rice)
Green onion to taste (sliced) (topping)
Sesame seeds to taste (topping)
Directions
Sauté the vegetables and walnuts in the olive oil.
Drizzle with dressing and mix.
Push the vegetables to one side of the pan and scramble the eggs.
Mix the vegetables with the eggs.
Add the rice to the pan and mix.
Top with green onion and sesame seeds.
