Breakfast Casserole

A staple dish worth customizing.

My mom makes the best breakfast casserole every Christmas. It's full of all the good stuff. This is a very basic version of that. Call it the "base" recipe for your own casserole. You can customize this to your liking with vegetables, meats, etc., or you can eat it as is! Suggestions for customizing this recipe: chopped onions, diced tomatoes, sliced mushrooms, shredded chicken and/or a few bacon slices!

I usually make a frittata as a meal prep for a few breakfasts, but every now and then I make this casserole for the boys. We always have whole milk for them too, which is why I used it in this recipe. If you're trying to keep this lower in calories, you can substitute with the milk of your choice: 2%, fat free, or even milk a milk substitute (like almond milk). The nutrition facts below are calculated for whole milk, full fat cheese, and 80 calorie per slice bread.




Breakfast Casserole


Ingredients

  • 6 eggs

  • 3 tbsp milk (I used whole milk)

  • 1 cup shredded cheese (I used Mexican blend)

  • 2 slices whole wheat bread (cubed)

  • Season to taste: salt, pepper, garlic powder & onion powder

Directions

  1. Mix all ingredients in a large bowl.

  2. Spray a small lasagna dish with cooking spray.

  3. Pour egg mix in dish and bake at 350 degrees for 20 minutes.
