Beef & Cauliflower Bake

Low carb and absolutely delicious!

If you are a keto fan, low carb lover or just enjoy a good cheeseburger with a side of veggies, this one is for YOU! We thoroughly enjoyed this meal. It was difficult to not go back for more and more. I paired my serving with a side salad, and it was absolutely plenty.


Ingredients

  • 1 lb ground beef

  • salt and pepper to taste

  • 1 yellow onion

  • 1 tbsp garlic (minced)

  • 1 head of cauliflower (cut in florets)

  • 4oz plain goat cheese

  • 1/2 cup shredded cheese

  • 1 tbsp butter (melted)

  • 2 eggs

  • 1/2 cup cream

Directions


Step 1

Brown the ground beef with onions, garlic, salt and pepper. Meanwhile, boil the cauliflower for 5-7 minutes.


Step 2

Drain excess fat from the beef. Drain the cauliflower. Pour the beef and cauliflower into a prepared lasagna dish, and toss half of the shredded cheese and all of the goat cheese (in chunks) in to melt.


Step 3

In a bowl, mix the butter, eggs and cream. Pour all over the beef mixture and stir until well combined. Top with the other half of the shredded cheese. Bake at 400 degrees for 30 minutes.
