A great addition to your fall meals!
This was so easy to make, and it made our simple meal feel festive! I hope you give this a try with the meat and green of your choice because we really enjoyed it. The best part about the acorn squash is that it isn't as tough to get right when it comes to the fall squashes, and it isn't so hard to cut through. Be sure to be careful when cutting though!
Ingredients
1 acorn squash
1-2 tbsp olive oil
salt to taste
cinnamon to taste
Directions
Cut acorn squash in half and scoop out seeds.
Brush oil all over the inside of the squash.
Sprinkle with salt.
Bake at 350 degrees for 40 minutes.
Optional: add 1 tsp maple syrup and 1 tsp pepitas per side after baking! I had baked chicken and turnip greens with ours.
