Bacon & Balsamic Spinach w/ Scallops

A dish RICH in flavor!

This was simply delicious. We had this over a bed of Right Rice, which was absolutely perfect. With all the rich flavors, I was satisfied and full immediately. I can honestly say that the leftovers were just as good too! On a night like this, I usually have something leftover from the night before for the kids. I always make sure that there is some form of chicken that they will eat on a night like this. Of course, I allow them to give anything new a try, but I definitely don't count on it when it's scallops that we are eating.


Ingredients

  • 4 slices of bacon (cooked and cut in bite size pieces)

  • 1 lb scallops

  • 3-4 tbsp balsamic vinegar

  • 10oz bag of fresh spinach

  • lemon juice to taste

  • pepper to taste

Directions


Step 1 Cook the bacon according to instructions. Place the bacon on a plate lined with paper towels. Remove half of the bacon fat. Step 2 Pat dry the scallops and cook in the skillet with the bacon fat over medium heat for about 3 minutes per side. Remove the scallops keeping all juices in the skillet. Step 3 Add the balsamic to the skillet and stir with other juices until well combined. Pour the spinach in the skillet and cook down completely. Step 4 Add the bacon (cut in bite size pieces) and scallops to the spinach, stir and serve. We had this over a bed of Right Rice (vegetable rice). Serves 4
