Avocado Quesadillas

Mexican at home is always a good idea.

We are huge fans of Mexican food. So any excuse to make it at home is good for me. I love avocado, and putting them in a quesadilla is just genius. It was absolutely delicious, and the chili pepper was the perfect combination to spice it up just a tad. I had cilantro on top and a little lite sour cream on the side for dipping, which was a great little tangy addition to this meal.



Ingredients

  • 1/4 cup green onions (chopped)

  • 1 chili pepper (seeded and chopped)

  • salt & pepper to taste

  • lime juice to taste

  • 1/2 cup cilantro (chopped)

  • 1 avocado (seeded and sliced)

  • 1/2 cup shredded cheese

  • 2 Ole Xtreme Wellness High Fiber Large Wraps

  • 1 tbsp grapeseed oil

Directions


Step 1

Mix the onions, chili pepper, salt, pepper and lime juice together until well combined.


Step 2

Heat a skillet over low-medium heat and drizzle half of the grapeseed oil in the skillet. Place the wrap in the skillet completely flat. Spread half of the shredded cheese on the wrap followed by half of the onion and pepper mix and half of the avocado slices.


Step 3

Fold one side over and cook for roughly 5 minutes and then turn over onto other side. Cook for an additional 5 minutes (until cheese is melted. Repeat the same process for the second wrap with the other half of the ingredients. Top with cilantro. Optional: dip in sour cream!
