The flavors are absolute perfection!
I realize it isn't autumn, but this would be a fabulous dish during the peak of apple season. This is one of those simple recipes that is always a win. I added the apple for some extra flavor, and it makes a huge difference! Be sure to keep an eye on the butternut squash. The smaller you cut it, the quicker it will cook. If you over cook it, the butternut squash will become mushy.
Ingredients
1 large butternut squash (peeled and cubed)
2 tbsp olive oil
1 white onion (diced)
1 apple (diced)
3 cups chopped kale
14oz turkey sausage link (sliced)
salt to taste
Directions
Step 1
Toss the butternut squash cubes in 1 tbsp olive oil and bake on sheet at 400 degrees for 10 minutes.
Step 2
Take the sheet out and add the onion and apple. Sprinkle salt to taste all over and toss. Then, bake for 5 minutes.
Step 3
Toss the kale with 1 tbsp olive oil. Take the sheet out and add the kale and sausage. Mix to combine and bake for 10 minutes.
