A great way to change up your salad!
I love a good salad. I would be happy with a salad for dinner most nights of the week. I'm perfectly fine with being vegetarian most of the week too, honestly. My husband, on the other hand, is not. If I'm going to make a salad for dinner, it needs to be dressed up and have a meat on it. Not knocking my husband though. He enjoys a good BLT Salad with just a boiled egg or a big southern veggie plate on occasion. He has gone through every kind of diet trend with me and never complains. I'm thankful he eats whatever I cook - even the bad meals.

This salad, however, did not disappoint. It was definitely out of the norm for us, but we truly enjoyed it! I used the Aldi Asian Sesame Dressing for a quick marinade on the chicken. I didn't even need dressing for the actual salad, but you could certainly give an extra splash of it if need be. You could have this salad on a week that you also plan on making the Egg Roll in a Bowl or Chicken Avocado Wraps so you can use the same ingredients for two or three nights, which keeps your grocery list a little shorter and your meal planning a little more simple.
Asian Chicken Salad
Ingredients
2 cups romaine lettuce (chopped)
1 cup prepackage raw coleslaw
1/4 cup cilantro (chopped)
1/3 cup cashews
1/2 cup mandarin orange slices
8 ounces of chicken (cubed and cooked in 3 tbsp Asian sesame dressing)
Instructions
Layer your salad bowl in the order of the ingredients. You can eat as is or dress it with additional Asian sesame dressing or any other dressing you prefer!
