Apple Cranberry Muffins

These lasted maybe 24 hours in our house...

These were a serious crowd pleaser in this house. I will be making these again very soon for me and the boys. We always taste test right after I make something. We all ended up eating one. The next morning, we all ate another for breakfast (including my husband), and just like that, they were all gone!


This was super fun to do with my middle. He is coming around to the idea of actually listening to instructions. I don't know what's worse, "terrible twos" or "terrifying threes"... Just saying! Watch our video to see how sweet he can be though; he may be super hard headed, but he truly has the best personality.


Apple Cranberry Muffins


Ingredients

  • 1/4 cup coconut oil

  • 4oz unsweetened apple sauce

  • 1/4 cup maple syrup

  • 3 tbsp liquid egg whites

  • 1 packet of sugar free apple cider mix

  • 1 3/4 cups whole wheat flour

  • 1 tsp baking powder

  • 1/2 cup unsweetened almond milk

  • 1/4 cup cranberries

Directions

  1. Mix all wet ingredients first.

  2. Then, add all of the dry ingredients and mix until well combined.

  3. Spray 7 cups in a muffin pan and fill with muffin mix.

  4. Bake at 325 for 20-25 minutes (toothpick check).
