So quick and tasty.
This is for the sour and tangy lovers out there. If you prefer a little sweetness in your dressing, you can add a tbsp of maple syrup or honey to the dressing to help out with all the sourness. I love sour; so this is perfect for me. My two year old even enjoyed sharing this salad with me. This kid eats raw onions like it's nothing. It kills me how open to all foods he is. We are constantly laughing at how "hungry" he is all the time.
Ingredients
For salad:
1 head of romaine lettuce (chopped)
2oz feta cheese
1/3 cup cherry tomatoes (halved)
1/2 cucumber (sliced)
6 artichoke heart halves
6 kalamata olives (sliced)
6 green olives (sliced)
1/2 yellow onion (sliced)
For dressing:
1 tbsp garlic chives (chopped)
salt & pepper to taste
1 tbsp Dijon mustard
2 tbsp olive oil
1 tbsp apple cider vinegar
Preparation
Step 1
Assemble the salad. Mix all dressing ingredients until well combined. Mix the dressing with the salad and serve!
